Originally established in 1862 by winemaking pioneer Hubert de Castella, St Huberts has played a long and distinguished role in developing the Yarra Valley's reputation for producing premium cool-climate Australian wines. For our Cabernet Merlot, fruit parcels are sourced primarily from vineyard sites on the warmer Yarra Valley flats, with a portion of the Merlot from the Upper Yarra.
The palate shows, plum and earthy flavours. Soft tannins frame the wine nicely.

Ripe blackcurrants, dark plums, and crushed herbs with lifted notes of cedar, mocha, and subtle vanilla oak
Palate:
Medium to full-bodied with juicy black fruit and a fine-grained tannin structure; Merlot lends plushness to the mid-palate while Cabernet delivers backbone and length
