Sourced from vines averaging 20 years of age at Strathlynn on the west bank of the Tamar River, this Sauvignon Blanc benefits from a sheltered hillside aspect and long, even ripening—producing fruit of exceptional flavour and freshness.Cold harvested at night to retain aromatics, the fruit was gently de-stemmed and crushed using anaerobic handling to protect against oxidation. The juice was then brightly clarified and fermented slowly at very cool temperatures in stainless steel to lock in brightness and detail. Bottled early under screw cap, the result is a wine with intensely perfumed aromas and a fresh, fleshy palate.On the nose, it opens with energetic herbaceous notes—cut grass, lime leaf, and nettle—leading into a zesty burst of tropical fruits and citrus on the palate.
