The Niche Cabernet Sauvignon 2022 is a beautifully balanced South Australian red that perfectly captures the varietal purity and finesse the region is known for. Crafted from fruit hand-selected and harvested in the cool of night to preserve freshness, this vintage delivers a seamless harmony of fruit intensity, structure, and smooth tannins. Fermented on skins for six days in a mix of static potters and rotary fermenters, the winemaking process achieves an ideal balance between gentle tannin extraction and vibrant fruit retention. Post-fermentation, select parcels were matured with subtle French oak influence, adding depth without overshadowing the fruit’s natural character. In the glass, it glows crimson with magenta hues. The bouquet opens with lifted aromas of cassis, plum, and chocolate-mint, layered with soft oak spice. The palate follows through with medium-bodied richness and a plush, fruit-driven core — flavours of plum, cassis, and dark cherry glide across silky tannins to a rounded, velvety finish. The oak remains understated, playing a supportive role to the wine’s pure varietal expression.
