Oak?Smoked Cheyney s Fortune Cheddar

Smoky sophistication meets artisan cheddar in Somerset

Crafted on the Godminster estate in Bruton, Somerset, this celebrated cheddar begins life as the same award?winning base used in the Vintage Bruton Beauty, which is then cold?smoked over sustainably?sourced oak chippings to impart a deep, mellow smokiness without overpowering the cheddar character.
Made using pasteurised organic cow s milk, certified by the Soil Association, and wrapped in Godminster s signature black wax for freshness and presentation.

Flavour Profile

  • A rich cheddar base with the classic nutty?savory cheddar flavour;

  • Lush, aromatic oak?smoke overtones: camp?style, woody and mellow rather than burning or harsh;

  • Balanced texture that allows the smoke to linger but keeps the cheddar s structure and cheddar?character front?of?palate.

Tasting Notes

On first taste you ll feel the familiar firm but creamy cheddar body. The smoke then rolls in gently, offering a subtle forest?wood tone and rounded savoury finish. The combination gives this cheese a distinct identity ideal for those seeking something beyond the straightforward cheddar but not so wild as to overshadow versatility.

Pairing Suggestions

  • Wine: A smooth, medium?bodied red (e.g., Merlot or Grenache) to hold up to the smoke; alternatively a smoky, light?to?medium whisky.

  • Beer / Cider: A smoked porter or a well?rounded amber ale; a dry cider with some apple?wood character would also complement the smoke nicely.

  • Board mates: Serve with rustic oak?smoked crackers, dried figs or apricots, roasted almonds or hazelnuts, maybe a savoury chutney (onion or apple?and?wood?smoke).

  • Cooking: Excellent grated over a gourmet toastie, folded into a savoury tart, or used in a smoked?cheese mac for depth.

Milk Source & Production

Made with pasteurised organic cow s milk on the Godminster farm in Somerset. The base cheddar is matured using a traditional recipe before undergoing a cold?smoking process with oak chippings from sustainable woodlands. Suitable for vegetarians.

Heritage & Style

Named after the great Godminster oaks whose leaves are a symbol of good fortune the oak?leaf motif and the name Cheyney s Fortune pay tribute to the farm s heritage and the natural woodlands surrounding the estate. This gives the cheese both story and character.

Maturation

Typically matured for up to 12 months (or an equivalent period for depth) before the smok ing process. This maturation develops flavour complexity and texture prior to smoking.

Presentation

  • Typically offered in a block/truckle size; your 150 g variant fits neatly in the premium segment (though many listings are for 200 g)

  • Wrapped in black wax with distinctive branding; ideal as a gift item or centrepiece for a refined cheeseboard.

  • Store refrigerated; serve at room temperature to allow the smoke aroma and full flavour to open up.

Shelf Life & Serving

  • Keep refrigerated until ready to serve.

  • Best served at room temperature (~15 18 C) to unlock aroma and flavour.

  • Once cut, wrap in waxed paper or cheese paper (or re?apply the wax if intact) and refrigerate; consume within 1 2 weeks for optimal smoke aroma and texture.
