Often brightly coloured and intensely flavoured, liqueurs are more than a supporting act. Often the most dominant flavour in a cocktail, liqueurs also balance stronger spirits when used in small quantities. The most famous liqueurs include ingredients that highlight their place of origin, such as the bitter herbs of northern Italy (in Aperol), or the elderflower blossoms of the French Alps (in St-Germain).
